Passionfruit Sour with Meringue


Ingredients
1½ teacups BRASSUCO passionfruit juice concentrate
2½ teacups water
2 yolks
6 soupspoons corn flour
5 soupspoons water
2 snow beat whites of egg
5 soupspoons sugar

Preparation
Thoroughly mix the passionfruit juice concentrate and water, and place on the fire until it boils. Separately, thoroughly beat the yolks and mix in with the corn flour and the water. Add the juice and stir on the fire until it thickens. Pour into a slightly dampened medium cake mould with a hole in the centre. Place in the refrigerator for about two hours, until it hardens. Beat the whites of egg to firm snow, add the sugar and set aside. Unmould the passionfruit sour into a large plate and decorate with the meringue. If you wish, decorate with cherries.
