Orange Foam
Ingredients
1 teacup BRASSUCO orange juice concentrate
1 teacup water
3 yolks
2 soupspoons corn flour
1 soupspoon Curaçao or Brandy
3 whites of egg
Preparation
Put the orange juice and water on the fire until it boils. Separately, beat the yolks with the corn flour, until colour lightens. Mix the orange juice mixture and the hot water and put back on the fire, stirring continuously until it thickens. Add the Curaçao or Brandy and wait for it to cool a little. Beat the whites of egg to snow and mix lightly with the cream, until thoroughly mixed. Place in glasses and serve chilled.
